The history of the drink appeared in 1957 at the fair in Thessaloniki. During the international event, Nestle presented coffee powder, which should have been poured with boiling water. During the event, Dimitris Vakondios wanted to make coffee, but he did not find boiling water.
Attempts to prepare a classic drink were in vain, so the man decided on an unexpected experiment. He filled the Nestle instant coffee with cold water and shook the liquid well. The result was an unusual chilled coffee with a rich foam, which Dimitris liked.
In Greece, due to the hot climate, the recipe attracted public attention. Chilled drinks are vital in the country. The method of cooking Vakondios did not require a cooling method and was loved by both bartenders and ordinary people. To strengthen the cooling drink, they add crushed ice to the coffee.
A little later, the unique name of Frappe coffee was borrowed from the French language. The management of the Nestle company decided to popularize the drink in hot countries. For the Greeks, this method of cooking has become the main one in the country.
WHAT IS IN A FRAPPE
Frappe – is a black coffee with foam, whipped with ice. There are many recipes. You can add sugar, milk, cream, ice cream, liqueurs, syrups, spices, even Coca-Cola to the drink. In coffee shops, baristas serve Frappe whipped. This drink differs from all other varieties of ice coffee.
There are three types of Greek Frappe:
- sweet: 2 tsp coffee and 4 tsp sugar
- medium: 2 tsp coffee and 2 tsp sugar
- simple: 2 tsp coffee, without sugar

Frappe with water and milk – Frapogalo. In Cyprus, baristas add only a little water to the Frapogalo for whipping the foam. Some coffee shops serve Frappe or Frapogalo with ice cream.

The main highlight of the Frappe is the high foam. The lushest and stable foam is obtained in coffee, devoid of oils. Therefore, the best option for making a coffee base Frappe is powdered or granulated instant coffee. It is a little harder to beat freeze-dried coffee, but if you prepare Frappe without milk, this type of instant powder is preferable.
In lush cafes, baristas prepare Frappes based on a single or double espresso. This drink is tastier and healthier.
In Greece, they like to add concentrated milk to the Frappe. It has a light caramel flavor. When mixed with melting ice, the concentrated milk is restored to normal. You can replace concentrated milk with regular milk with a fat content of more than 2.5%, or 10% cream. Do not use skimmed milk: the drink will have a too watery taste.

Classic Milkshake:
- Vanilla ice cream-200 g
- Milk – 100-150 g
- Fruits/berries – 100-150 g (optional)
- Fruit jam – 1 tsp. (for decorating a glass)
- Whipped cream for decoration – optional
- Mint for decoration – optional
Fruit Milkshake:
- Ripe banana – 1 pc.
- Milk – 300-500 ml
- Fruits/berries-150 g
Cooking technology:
- Prepare the ingredients according to the list.
- Pre-cool the glasses for serving the drink by placing them in the freezer for several hours.
- Then, with a brush or a spoon, apply a little jam, jam, or thick syrup to the walls of the chilled glasses in an arbitrary manner. Place the glasses back in the freezer.
- Combine 100 milliliters of milk and 200 grams of vanilla ice cream in a blender bowl. If desired, add fruits, berries, or other favorite ingredients.
- Whisk everything for a few minutes until a homogeneous mixture is obtained. If necessary, you can adjust the density of the drink by adding more milk.
- Pour the finished drink into glasses.
